Strawberry Puree Margarita

Description

This Strawberry Puree Margarita is the perfect cocktail to enjoy outside. It’s not too strong, it’s refreshing, and it’s just right. The salt, the sweetness, the acid, the tequila, the orange liqueur, it all works together so well. You can scale this recipe way up and make a huge batch, or you can make a couple at a time and pace yourself.


Ingredients

  • Half a cup of fresh strawberries
  • Two tablespoons of fresh lemon juice
  • A teaspoon of sugar or a splash of simple syrup
  • A few tablespoons of lime juice
  • An ounce and 3/4 to two ounces of a nice silver tequila
  • A tablespoon of orange liqueur (I’m using Cointreau, I love that, and Grand Marnier)
  • Half a cup of ice

Instructions

  • Quarter and hull your strawberries and place them in a pot
  • Add in your lemon juice and sugar or simple syrup
  • Muddle the strawberries and bring the mixture to a boil, then let it simmer down
  • Squeeze your limes and set the juice aside
  • Once your reduction is cool, add it to your blender along with your ice, lime juice, orange liqueur, and tequila
  • Pulse it on crush until it’s all nicely combined
  • Run a spent lime across the rim of your glass and dip it in salt
  • Pour your drink and garnish with a sliced strawberry

Notes

  • You can make more of the strawberry reduction and use it in different kinds of drinks, like smoothies
  • I like an acidic margarita, so I use the juice of a full lime. You could use half, it’s up to you
  • I don’t suggest using Triple Sec, not my favorite. Cointreau and Grand Marnier have a dash of bitterness that offsets the sugar of the liqueur
